Caraway (Carum carvi) is a classic culinary herb prized for its warm, anise-citrus aroma and versatile use in breads, sauerkraut, roasted vegetables, and spice blends. Beyond the flavorful seeds, its delicate, feathery greens are also edible—adding a mild, carrot-parsley note to salads and soups.

A cool-season biennial typically harvested for seed in its second year, Caraway forms a tidy rosette the first season, then sends up airy umbels of white blooms that draw pollinators. Plants reach 18–24 inches tall and perform beautifully in well-draining soil with full sun.

Harvest leaves young for fresh use, then collect mature seed heads when they turn tan-brown and aromatic. Dry thoroughly before threshing and storing to preserve peak flavor and fragrance for your pantry.

🌱Planting Instructions

Approx seeds per order 100

Direct sow in early spring as soon as soil can be worked, or late summer for fall greens. Caraway dislikes transplanting; choose a sunny, well-drained site and prepare a fine seedbed. Lightly enrich soil with compost for steady growth.

Sow seeds 1/4 inch deep, spacing 8–12 inches apart in rows 12–18 inches. Keep soil evenly moist until germination (7–21 days). Thin if crowded—good airflow reduces foliar disease and supports strong plants.

Harvest leaves young through the first season. In year two, allow flower heads to dry on the plant until tan, then cut and finish drying in a warm, airy place before threshing. Store seeds airtight in a cool, dark cabinet for best flavor.
