  Bring 2 quarts of water to a boil, add beans, and simmer in a covered pot for 3 hours longer. Add one chopped onion, one chopped celery stalk, two cloves of minced garlic, the vegetable packet, and a ham bone (optional) to the bean mixture. 

  Simmer, uncovered, until the beans are soft, about 4 hours. If you prefer a smoother soup, puree half the mixture, stir in the chopped meat (if added), and season to taste with salt and pepper. For a bit more ZING, add a few dashes of hot sauce. (optional: ¼ cup of sherry may be added at the end.) Now enjoy the BEST bean soup you've ever tasted!
